Chocolate Peanut Butter Coconut Oil Fudge – A Better For You Fudge
Have you ever cooked with Coconut Oil before? Coconut oil is awesome. One of my favorite brands of coconut oil is HERE.
Fudge is something I can never refuse. While we walk through candy stores and the kids are grabbing everything they can find – all I want is fudge. Any flavor, all flavors. The good news is – if I plan appropriately, I can always have delicious an much more healthy fudge on hand and any time I want!
I whipped up a batch of chocolate peanut butter coconut oil fudge for my family. Best part is – no cooking. It takes five minutes to throw together.
Mix the following together:
1/2 cup Coconut Oil slightly melted
1/2 cup good quality cocoa
1/4 cup raw honey
1/2 cup natural creamy peanut butter (or chunky – your choice)
1/4 teaspoon all natural vanilla
Mix them all together in a bowl. You can either pour it into a pan until it sets or put cupcake liners in a cupcake tin and pour a little in each paper. This is my preferred method. They don’t taste like regular fudge, but I would compare it to a dark chocolate peanut butter fudge. It is a much better alternative to all the sugars etc… that are in regular fudge.
Store in refrigerator and eat immediately upon removal. It will set in about fifteen minutes if placed in the freezer temporarily.
