The 321 Low Calorie Cupcake
Do you ever just want a snack without spending a ton of time in the kitchen? Or want a snack but if you make a full batch of something like cupcakes – they go to waste. You just want one – NOT 12!
Looking for a treat that will not leave you craving? This one is the perfect solution – a “you can have your cake and eat it too” solution!
To make these precious desserts – you need one box Angel Food Cake mix and one box any other flavor cake mix. I am pretty boring so I use yellow cake mix for just about everything. With this recipe you can throw the mix together in a large baggie or a large resealable container (what I use). Shake shake shake, shake shake shake, shake your cake mix… Until they are thoroughly blended together. Then you have this mix whenever you want it (or the kids do so they don’t need to bother me for a full batch).
Why is it called 3-2-1? Mix 3 Tablespoons of the cake mix with 2 Tablespoons of water and cook in a greased mug in the microwave for 1 minute (hence the 3-2-1).
Let it cool and remove it from the mug (or you could choose to eat it directly from the mug). Serve with frosting, whip cream, ice cream or whatever you wish. It is a nice light and airy cupcake. This version serves with frosting but for fewer calories add whip cream or something like a dollop of Halo Ice Cream!
